Tasting Notes
This wine is mid straw in colour. The nose shows a fine perfume of fresh pear combined with stone fruit and spicy characters. The palate is tightly structured with subtle flavours and fine acidity. The finish is long with just a touch of classic Pinot Gris firmness.
Cellaring

Winemaking
Ripe Pinot Gris fruit has a considerable amount of pink colour as well as developed phenolics. In order to keep juice colour and phenolic levels as low as possible the fruit was whole bunch pressed. After cold settling the juice was fermented in stainless steel at 17 degrees C. This was followed by a short period of yeast lees contact for additional complexity. After stabilization and clarification the wine was bottled on 2 June 2008.
Viticultural Notes
The 2007-2008 growing season was warm and dry. Even so cropping levels were good with a nice balance of flavour and acidity.
