Tasting Notes: Aromas of plum fruits, five spice, sage and crushed rock. Dense red and dark fruits combine with earthy reduction and charcuterie. Silky tannins lengthen the palate and show off the positive effects of having a cool site in a warm season.
Winemaking Notes: Harvest: Hand-picked March 5th Vinification: Sorted, partly de-stemmed (20% whole bunch), short cold soak, natural primary and malolactic feremtation, pressed to French oak (20% new) Elevage: 10 months in oak, racked off lees just prior to bottling
Viticultural Notes: Swallowfield is located in Gembrook, making it the southernmost vineyard in the Yarra Valley. While Gembrook is known for its volcanic derived red soils, Swallowfield sits on a granite outcrop. These quartz rich soils are perfect for growing Pinot Noir and Chardonnay. Dijon clones 114 and 115, ‘Dans les Bois’ translates to ‘In the Woods,’ as this incredible vineyard block is sheltered on all sides by natural forest. The 2018 harvest will be remembered fondly by winemakers in the Yarra Valley. It was a rare season that gave above average yields and excellent quality fruit. Dry sunny conditions with cool overnight temperatures provided good natural acidity and concentrated wines at lower alcohol levels.
