Tasting Notes: Jasmine, preserved lemon and sea-spray / saline aromas. Lively on the palate where the mousse flows freely. Flavours are led by lemon and lime yet finish with a pleasing maritime vibe of great interest.

Gently whole bunch pressed according to time honored Méthode Traditionelle to retain crisp acidity and minimise juice solids. Juice racked off solids to temperature controlled stainless steel fermentation vessel and inoculated with specialist yeast for sparkling wine production. Secondary fermented in this bottle and aged on yeast for +36 months to enhance yeast autolysis flavours and aromas.
Viticultural Notes: This single vineyard sparkling wine is grown on our Isabella’s Vineyard on Briarty Road, Gruyere. This site is cane pruned and north facing producing a tightly structured sparkling wine showing elegant fruit with a rich creamy texture and fine mousse. Grown on ancient, mountain derived sandy clay loams, these rocky soils combined with our forty year-old vines are at the heart of this wine.
After several warm growing seasons, 2017 was a return to a classic Yarra Valley harvest producing balanced, elegant wines with wonderful natural acidity.
