This wine is inspired by the traditional blend of Bordeaux’s ‘Left Bank’ where the predominate variety is Cabernet Sauvignon, we celebrate our interpretation of this blend here in the Yarra Valley.
Tasting Notes: On the nose there‘s bright red spiced cherry and plum fruits, with earthy tones of twigs and forest florals. The palate is energetic with red currents, black olives. The earthy tannin is a key feature whilst it finishes fresh.
Winemaking Notes: Handpicked from the 18th to the 22nd of March
Vinification & Elevage: Fruit parcels were fermented using both whole berry and crushed fruit. On skins for 14 days and pressed to French oak (20% new) for malolactic conversion, in oak for 10 months.
Viticultural Notes: Our winemaking philosophy is to produce the best fruit possible in the vineyard and allow the wines to express the indiviuality of the vineyard and each growing seaon. The grapes for this wine were handpicked with viticultural practices based around maintaining balance in the vineyards, sustainability and responsiveness to changing environmental conditions.
2021 was a welcome return to ideal growing conditions here in the Yarra Valley. A prolonged, classical season allowed for brilliant definition of flavour across our range.
