“This is every bit Upper Yarra pinot noir and yet it also has some extra power to it; some extra grunt. Stewed red cherries, inlays of herbs, whispers of woodsmoke and bacon, plus distinct undergrowth note. It’s a complex pinot noir, and a svelte one. It feels polished. It has that Upper Yarra ‘watercolour’ aspect to its acidity but then it pushes through with beyond-norm texture and flavour. This is very good.”

‘Dans les Bois’ translates from French into ‘In the Woods’ and represents this incredible vineyard which is surrounded on all sides by natural forest.
Tasting Notes: A nose bursting with immediacy; rose petal florals, sweet boysenberry fruit tones with warm spices and some iron mineral notes. On the palate we see plenty of tight red berry fruit, bright acids and fine smokey tannin. Its persistence echoes its Upper Yarra origins and the cool flavours linger.
Winemaking Notes: Hand-picked on the 26th of March
Vinification & Elevage: Fruit was fully destemmed as whole berries. A short cold soak prior to fermentation and on skins for 12 days. The wine was pressed to French oak (25% new) for malolactic conversion on lees and in oak for 10 months. 275 dozen produced.

The grapes for this wine are from a single vineyard in Yarra Junction.
2021 was a welcome return to ideal growing conditions here in the Yarra Valley. A prolonged, classical season allowed for brilliant definition of flavour across our range.
