Tasting Notes: This Cabernet opens with mulberries and blue fruits before florals emerge as do spiced nuts, sweet earth and a little coffee bean aromas from oak. To taste the wine has a list of red and black fruits in cherries, blueberries and blackberry. The wine is fresh in its lively acid but has a rumble of high-quality tannin that underlies the fruit and finish of fine length. This wine has been built for the cellar and shows the hallmarks of a fine Yarra vintage for Cabernet. It will reward patience.
Winemaking Notes: Hand-picked 11th of March
Vinification & Elevage: Fruit is crushed and transferred to large format wooden fermenters for primary fermentation. 4-day cold soak, then plunged once per day until the ferment has concluded, this is followed by a 7 day post-fermment maceration. The wine is then pressed to French oak (30% new) for indigenous malolactic conversion and maturation. 11 months in oak, then racked twice prior to bottling.

The fruit for this single vineyard Cabernet Sauvignon is grown on our Isabella‘s vineyard on Briarity Road in Gruyere.
Grown on ancient, mountain derived sandy clay loams, these rocky soils combined with our 27 year -old vines are at the heart of this wine.
Optimal conditions for both flowering and fruitset in the vineyards gave well balanced yields with plenty of promise leading into the 2019 harvest. A dry January and February followed, culminating in a relatively compressed vintage, though attention to detail in the vineyards gave winemakers wonderfully balanced fruit with concentration of flavour and exceptional natural acidity.
