Tasting Notes: Deep dark fruit aromas of black cherry and mulberry abound with hints of fruitcake spice and a zephyr of olive tapenade.
A velvety evolution on the palate with a rich, deepening complex compote of dark berries and blood plums. Fine but firm acid from the Cabernet Franc portion of this wine holds the line and gives driving force to the palate length. Fine, silky chocolate texture defines the end with a lick of liquorice on the aftertaste.
Winemaking Notes: Fruit is fermented as whole berries. Short cold soak then plunged once a day and pressed after 14 on skins to French oak for indigenious malolactic conversion and maturation. 10 months in oak, then racked twice prior to bottling.

Optimal conditions for flowering and fruitset in the vineyards gave well balanced yields with plenty of promise leading into the 2019 harvest. A dry January and February followed, culminating in a relatively compressed vintage, though attention to detail in the vineyards gave winemakers wonderfully balanced fruit with concentration of flavour and exceptional natural acidity.
Our winemaking philosophy is to produce the best fruit possible in the vineyard and allow the wines to express the indiviuality of the vineyard and each growing seaon. The grapes for this wine were handpicked with viticultural practices based around maintaining balance in the vineyards, sustainability and responsiveness to changing environmental conditions.
