Tasting Notes: Pale to medium ruby rose colour, flashes of burnished copper with a fine delicate mousse. Striking aromas of sun-warmed strawberries and clotted cream with delicate baked Danish undertones. An opulent evolution on the palate with warm fleshy red fruits leading to a silky mid-palate and a slightly sweet spice tone. A great acid line draws the palate to a close with a pomegranate pith and dry red apple tannin finish.
Winemaking Notes: Harvest: Hand-picked on the 14th of February
Vinification & Elevage: Whole bunches were loaded to the press and gently squeezed to release juice to extract colour from the skins. After a period of cold soaking, the whole bunches were then pressed according to time honored M├ęthode Traditionnelle to retain crisp acidity and minimise juice solids. Juice was racked off solids to temperature controlled stainless steel fermentation vessel and inoculated with specialist yeast for sparkling wine production. Secondary fermented in this bottle and aged on yeast for 17+ months to enhance yeast autolysis flavours and aromas.
Viticultural Notes: Grapes for this wine come from a vineyard in Gembrook, Upper Yarra. The southernmost vineyard in the Yarra Valley, this vineyard is known for its volcanic derived red soils which sits on a granite outcrop. These quartz rich soils are perfect for growing Pinot Noir.
The 2018 harvest will be remembered fondly by winemakers in the Yarra Valley. It was a rare season that gave above average yields and excellent quality fruit. Dry sunny conditions with cool overnight temperatures provided good natural acidity and concentrated wines at lower alcohol levels.
